Fresh fruits, light creams and aromatic herbs star in the fast refrigerator sweets that you can make quickly in a very short period of time.
1. Easy banoffee cheesecake
30 Minutes + 60′ Waiting • Easy to make • Recipe for 4 people

Materials:
- 225 gr. digestive type cookies
- 100 gr. melted butter + 75 gr.
- butter at room temperature
- 75 gr. soft brown sugar
- 400 gr. condensed milk
- 2 bananas
- 1 tbsp lemon juice
- 150 ml cream 35% fat, frozen
- 100 gr. caramel syrup
Implementation:
Put the biscuits in the mixer and make them powder, then transfer them to a bowl together with the 100 g. melted butter and mix well. Transfer the mixture from the bowl to a 20 cm diameter form and press the biscuits with the spoon until we have a flat, smooth base. Set the base aside.
Put the 75 gr. butter and 75 g. sugar in a non-stick pan and cook over low heat until the sugar dissolves. Add in the sweetened milk and mix. Let it boil for exactly 1 minute from the moment the mixture boils until we have a golden caramel. Remove from the heat and spread the caramel on the base of the cookies and set aside for 1 hour. The caramel should be thick, so if we see that it is quite runny, we boil it a little more.
Carefully remove from our form and place our banoffee on a serving plate. Cut the bananas into slices, put them in a bowl and pour the lemon to go everywhere. We then place them all over the surface above our candy. Beat the cream in a bowl until it becomes whipped and spread the whipped cream over the bananas. Garnish with caramel syrup and serve immediately or refrigerate until ready to serve.
2. Strawberry sgroppino
5 Minutes • Easy to make • Recipe for 2 people

Materials:
- 2 scoops of strawberry or raspberry sorbet
- sparkling rosé wine
- 1 strawberry, sliced
Implementation:
Just before we serve our main course, we put a scoop of sorbet in each champagne glass and then put the glasses in the freezer. When ready to serve, carefully pour a little sparkling rose wine over the sorbet. Garnish the strawberry slices on top, serve and enjoy.
3. Classic banana split
5 Minutes • Easy to make • Recipe for 2 people

Materials:
- 2 ripe bananas
- 4 large scoops of vanilla ice cream
- 2 handfuls of roasted hazelnuts, chopped
- chocolate syrup, for serving
- 80 gr. maraschino cherries for serving
Implementation:
Cut the bananas in half lengthwise and put them in a bowl. Place 2 large scoops of vanilla ice cream on each and top with a handful of chopped hazelnuts, chocolate syrup and garnish with a few maraschino cherries on top.
4. Banana pancakes
25 Minutes • Easy to make • Recipe for 4 people

Materials:
- 100 gr. flour
- 1 tbsp baking soda, powder
- 2 tbsp liquid vanilla
- 1 egg
- 150 ml whole milk
- 5 ripe bananas, peeled
- light olive oil, for frying
- powdered sugar, for serving
- salt
Implementation:
In a large bowl, whisk together the flour, baking soda, vanilla and a pinch of salt. Break the egg and pour the milk. Beat until the mixture is homogeneous and becomes a thick batter. Cut the bananas into four diagonal pieces each.
Fill a pan one-third full with oil and heat over high heat. Dip each of the banana pieces into the batter, making sure they are completely covered, then lower the heat to medium. Fry in batches for 2 minutes until golden brown all over. Drain on kitchen paper, sprinkle with powdered sugar and serve.
5. Deconstructed pavlova with strawberry jam and whipped cream
10 Minutes • Easy to make • Recipe for 4 people

For the whipped cream
- 300 ml heavy cream for pastry,
- 35% fat
- 2 tbsp elderflower syrup (cordial, in cellars)*
- ½ tsp powdered sugar
- 400 gr. large ready-made meringues
- 250 gr. Strawberry jam
- 5 strawberries, halved
Implementation:
Beat the cream together with the elderflower syrup and sugar for 5-7 minutes until you get a nice stiff whipped cream. Then gently break some of the meringues into large pieces and place some of them on a large serving platter. Spoon over some of the cream and some of the strawberry jam and then repeat, forming the layers. Garnish with a few fresh strawberries, serve and enjoy.
Note:
Cordials are something between a liqueur and a syrup and are used in the preparation of various cocktails. They are essentially a concentrated mixture, similar to a liqueur (with or without alcohol) and are usually not as sweet as syrups. In some parts of Europe cordial and liqueur are the same.
